Summer Savory is the preferred variety, having a sweeter taste and being less pungent than its perennial relative, Winter Savory.
During Roman times it was used to flavour foods until black pepper made its way to Europe. It is now widely used as a seasoning for grilled meats, barbeques, stews, sauces and an ingredient of herbes de Provence.
Savory can be used similar to mint, add a sprig when cooking vegetables like broad beans and potatoes, or add finely chopped savory with diced shallot to melted butter and pour over cooked vegetables. A few pieces added to the water in which brassica are being cooked will reduce the strong odour of these vegetables in the kitchen.
Medicinally it has been used for digestive disorders to treat symptoms such as cramps, stomach pains, nausea, indigestion and more.
Prefers full sun, and free draining soils. Tolerates dry conditions. Can be grown in pots and also an excellent companion plant.
