Native to the Mediterranean region, Sage has a long history of medicinal and culinary use and in modern times it has been used as an ornamental garden plant.
An essential herb it has a savoury, slightly peppery flavour and favoured with fish, in poultry stuffing, casseroles, sausages and other meat dishes. Use leaves sparingly because of strong flavour.
Used since ancient times for all manner of uses including warding off evil, snakebites, fertility and more. The Romans referred to sage as the “holy herb”, and employed it in religious rituals. Medicinally it can be used as a gargle for a sore throat.
Plants grow best in sandy, well drained soil and in full sun.
