Organic Lentils

Lentils are one of the highest protein sprouts at 9g protein per 100g sprouts. The sprouting process boosts lentils’ phenolic content and these compounds have antioxidant activity that may provide anti-cancer, anti-inflammatory and anti-allergenic properties. High in soluble fibre, which can reduce the absorption of cholesterol and may aid in blood pressure management and regulate blood sugars. For best eating and digestibility, harvest when the shoot is the same size as the seed. Sprouts can be eaten raw or cooked.
