Highly regarded tree from Northern India that is high in vitamins and minerals, and is almost entirely edible. Cook immature seed pods like green beans, leaves like spinach and roots like horseradish. Flowers, seeds and bark also have therapeutic uses.
A sun and heat loving plant that is fast growing and thrives in most soil types but doesn’t tolerate hard frosts. Scarify seed and soak for 2-4 hours in warm water before sowing.
Scarify: Slightly nick (toenail clippers), chip or sand one end of the seed.
