A member of the mint family, this decorative shrub-like plant can be used as a tea with soothing qualities useful for colds and flu or as a flavouring for soups, sauces, meat and egg dishes, either fresh or dried. Use sparingly because of its strong flavour.
Due to its properties as an antiseptic, cough reliever and expectorant, it has been used as a traditional medicine. It is also used to flavour liqueurs and is part of the official formulation for Chartreuse as well as an ingredient in Absinthe, where it is the main source of green colour.
The scented blue, white or pink flowers attract bees throughout summer and is used in some places by beekeepers to produce nectar from which bees make a rich and aromatic honey.
Hyssop is tolerant to drought and poor soils and thrives in full sun and warm climates.
