Choy sum (Tsai shim) is also known as Chinese flowering cabbage and a popular leafy vegetable in Chinese cuisine, commonly used in stir-fries and soups. Best harvested immediately after the yellow flowers begin to appear, leaving only 3 or 4 young leaves on the slender flowering stem.
Successive stalks will then grow from the leaf axil and, particularly if the plants are given a small dose of fertiliser after each picking, a continued harvest can be enjoyed.
